Green beans with garlic

This is an extra large recipe, meant to serve at least 12 people. It might need two batches of cooking; luckily it’s fast and tastes good at room temperature.

  • 4.5 pounds green beans, trimmed
  • 5 cloves garlic, minced
  • 1-2 teaspoons red pepper flakes
  • Salt
  • 1/4 cup peanut oil

Heat oil over high heat until almost smoking. Add green beans, red pepper flakes, and salt. Toss almost constantly with tongs until beans are tender, but still somewhat crunchy. Just before they’re done, add the garlic and toss. Don’t allow the garlic to burn.
