Carrot salad with cumin

Serves 12.

  • 3 pounds carrots, peeled and grated
  • 3 cloves garlic, minced
  • 1/2 cup lime juice (6 limes?)
  • Grated zest of all limes
  • 6 tablespoons chopped scallion
  • 1 large jalapeno, seeded and minced
  • 1 1/2 teaspoons ground cumin
  • 1 1/2 teaspoons ground coriander
  • 3/4 teaspoon dry mustard
  • 1 cup olive oil
  • 6 tablespoons chopped cilantro

Whisk together all dressing ingredients except cilantro, and let stand for at least 15 minutes. Add cilantro, then toss with grated carrots.
